Adults attending a birthday for a two-year-old weighed in with the wine, beer and food and one fellow brought two pots of chili—one of the more familiar red variety, the other was probably a more elaborate preparation (he was a pretty accomplished cook), of the white chili recipe below.
It doesn’t sound so exotic when you review the recipe, yet not that many people will have encountered white chili. We’d suggest you surprise folks some day when you’ll be watching football by serving a pot of Winter White Bean Chili using this recipe as a base. Modify as you see fit (We’d suggest prepping some chopped onions and fresh cilantro as optional add-ons).
A good quality craft beer that’s not too hoppy would be a fine accompaniment--perhaps a Pilsner from Chuckanut Brewing.
Winter White Chili
Ingredients
1 pound ground pork
1 onion (medium, diced)
1 teaspoon ground cumin
2 teaspoons chili powder
16 ounces white beans (drained)
14 ounces corn (drained)
14.5 ounces chicken broth
4 ounces diced green chiles
Directions
In a large saucepan, brown pork with onion, stir in cumin and chili powder; stir. Stir in remaining ingredients; bring to a boil, cover and simmer for 15-20 minutes, until heated through and flavors are blended.
